Get some pork or chicken, lamb, heck beef burgers or whatever meat you'd like and cooks great in the oven. Olive oil, pepper, salt, oregano, thyme, maybe some beer or wine, garlic, maybe some paprika and mustard, especially for pork or chicken, maybe some chili if you're feeling it, dont overdo it.

Potatoes, clean 'em up, keep the skin, cut 'em up, put them with the meat, season accordingly. Make sure they can get the heat to crisp up. Throw in oven for about 1 hour, till it looks good.
Prepare a simple greek salad or something simpler and quicker, keep whatever you like or can find fresh;

tomato (I often like them sundried, but fresh gets the best juice for dipping), cucumber, onion, green pepper, olives, salt, pepper, oregano, lots of olive oil (important) and vinegar.
Maybe some other cool stuff like anchovies, rusk, caper leaves, but maybe for another time.

Feta cheese if you can find (goes great with the potatoes too), or some other white creamy salty cheese. I also like a simple shredded carrot with leek, quick and tasty.

Prepare the table. Get a good wine. I prefer a local dry red, try out different ones to find your preference. Relatively cheap and tasty with food, a good contrast. Maybe you'd prefer a beer, classic lager perhaps for a classic village dish. Maybe water works for you. Tsipouro if you're badass.
