I've been trying my hand at some soups recently. First one is a vegetable soup with bacon bits. I'll get pictures the next time I make it.
Ingredients: 1 box chicken stock, 1 tablespoon of bacon grease, 1 bag of bacon bits, a couple of tablespoons of EVOO, 3 green peppers (or mix in other color peppers), 1 red onion, 1 jalapeno pepper, 1 small bundle of green onions, 1 bag of frozen corn, 2 cans of northern beans, one medium can of fire roasted tomatoes, a clove of garlic, salt and pepper to taste.
Cooking basically involves starting with heating the olive oil and bacon grease to start, then adding in the cut vegetables and heating and stirring for several minutes until the peppers are a bit softer. Then, add chicken stock and cook for a half hour to an hour until the vegetables are soft.
That amount makes enough for probably about 8 servings or so.
