long ago i knew a guy from small town alaska, the only diner in town offered "local bush meat" when available
moose was good, beaver was tough and stringy but ok, but bear meat is "the worst"

Mate just came from Svalbard, and polar bear meat is basically the red meat equivalent of seagull. Only fit for dogs, not worth 400 kroner a plate.
