moose was good, beaver was tough and stringy but ok, but bear meat is "the worst"

Yeah.
Mate just came from Svalbard, and polar bear meat is basically the red meat equivalent of seagull. Only fit for dogs, not worth 400 kroner a plate.

Edit: Panda might be good though, no fish in their diet.

Wrong. It depends on what the bear is dining on. Some bears in Alaska gorge themselves on wild blueberries and their meat has a delightfully non-gamey taste.
