One thing I might add is that for self-hosting email, you're gonna need a website. For that I'd recommend now.top or nic.ru (if you want a .su domain, which is a lot more bulletproof). As for hosting the website, you also have DDOS protection. I'd recommend Akamai, BitMitigate or Vanwanet, if all else fails.

No you don't. All you need is a valid MX record with the hostname set being resolvable via A record.
