you could start small with a food truck, since you work during the week you would have to set up shop near weekend venues like a zoo or during an outdoor concert. Don't know how local those two would be for you. or you could take the plunge and jump in with both feet with the food truck.
Calculate sales, and be reasonable. Don't set a goal of something like 100 sandwiches, that's unlikely. (that's 10 an hour for ten hours. Can you make a sandwich in 6 minutes? Drinks and brownies and cookies will be your biggest sellers.
compensate for food costs, fuel and licenses and permits
Set a profit margin of 30%. Then make sure to deduct some of your living space as your office, you can take that value/worth off your taxes.
